This Is How You Make Gourmet Takis, According to a Pastry Chef

Claire Saffitz has built a following for her Gourmet Makes video series, where a Bon Appetit pastry chef recreates (and tries to improve) our favorite childhood snacks. If you’ve seen any of her videos, you’ll know that Saffitz usually starts off incredibly confident and quickly runs into unexpected issues that overwhelm her. On the latest episode of Gourmet Makes, she made the classic snack that many Mexicans, Mexican-Americans and Latinos grew up eating: Takis.

To be honest, when the BA staffers talks about Takis, there’s a little gringo-ing in the 33-minute video. But it’s overall pretty enjoyable. Claire, who kept frying her creations only to see them fall apart, was able to find her way via a video chat with senior food editor Rick Martinez, who provided some guidance.
