In many cities across the United States, eloteros are our heroes. Not only do their corn on the cob offerings transport many of us to our childhoods, they also know that the classic elote recipe ain’t broke and certainly doesn’t need fixing. While they stick to seasoning the snack with cheese, mayonnaise, and butter, others have taken to elote experimentation – and we can’t say that we’re entirely here for it.
